One night recently I was trying to recreate an old recipe I used to love while also trying to use up some veggies in the fridge and accidentally created one of our family’s favorite new dishes!
This meal checks all the boxes- it’s easy to make, healthy, minimal ingredients, flavorful and delicious! And as I mentioned before, it works out great for using up veggies that are on their way out. I hate being wasteful with food so this was a win-win!
To back up though, let me give you a little bit of my own history here for a sec. I studied nutrition in college and after I graduated I moved right on into the weight loss consulting industry. I was a girl who loved food, loved eating healthy and loved learning all the best tips and tricks to keep weight off while LIVING. YOUR. BEST. LIFE.
So I got nice and cozy with the low carb movement! But what was important to me was not sacrificing flavor in meals- heck no!
This new dish I’ve been loving on- the base is zoodles, or zucchini spirals! I’m a carb FIEND but trust me, this recipe didn’t leave me feeling like something was missing at all by using zoodles in place of regular pasta. If you haven’t jumped on the zucchini noodle bandwagon yet, you’ve been missing out! They are so good and work well with whatever flavors you add to your meal. In this case, the pasta “sauce” is made from Laughing Cow cheese wedges and Italian seasoning. So easy, right?? These little cheese wedges are low in calories but have great flavor and do the best job with delivering the silky smooth creaminess. Mmmhmm.
I’m also a huge lover of shrimp and any meal with shrimp. And one of the best things about shrimp is that it works great with nearly any vegetable! That’s a big reason why this recipe is so versatile. If you eat meat you could make this meal with chicken if you prefer that but honestly, shrimp is just *chef’s kiss* in this dish.
Like I said, recipes that keep lots of flavor while remaining healthy are big hits with me. I think that’s why I love this meal so much. We all want to be healthy but we hate feeling like we have to sacrifice our beloved carbs in order to have a bomb ass pasta dish. This is the type of meal that leaves me feeling great without the sluggishness you feel after consuming way too many carbs. In fact, whenever I make this I have at least two full bowls and I don’t get even a hint of a stomach ache.
It’s become one of our favorite meals and is now in the rotation every week. It also really doesn’t require any sides but if you wanted to you could add some garlic bread and that would pair perfectly with this dish! It’s low carb so add that garlic bread and feel no guilt girl!

Ingredients
- Spaghetti
- 2 zucchinis (spiralized)
- Olive oil
- Shrimp, raw and deveined with shell and tails removed
- Italian seasoning
- Grape tomatoes, halved
- Spinach leaves
- Shredded carrots
- 6 Laughing Cow Garlic and Herb cheese wedges (regular or light)
Instructions
- Begin boiling water for spaghetti in a medium sized pot with a generous amount of salt. Once boiling, cook spaghetti according to box instructions and set a timer for 3 minutes shy. Meanwhile, get your shrimp ready to cook.
- Heat olive oil in a large sauté pan on medium heat. Once hot, add shrimp and some Italian seasoning.
- Once your spaghetti timer goes off at 3 minutes shy of being done, add in the spiralized zucchini to the pot and continue cooking until the spaghetti is done. Once done, drain the spaghetti and zoodles together in a strainer and transfer them to a large bowl.
- Add Laughing Cow cheese wedges to the bowl and stir well.
- Once the shrimp are cooked through, add to the bowl with the spaghetti and zoodles.
- In the pan that you cooked the shrimp in, add more olive oil and tomatoes, spinach and shredded carrots. Sauté until spinach is wilted and tomatoes have softened a bit.
- Once done cooking, add to the bowl along with more Italian seasoning and stir well.
- Serve hot and enjoy!
